The second day was a little harder. A few times I found myself wanting ice cream that wasn't vegan but quickly though better of it. Instead I stuck with vegan pasta salad, a baked potato and some salad. Now I know the pasta salad is very unhealthy but right now, financially, its all I got. Next week is pay day and I plan to maybe go to the Whole Foods store since they have more of a variety.
I know fruits and vegetables are essential but what else do healthy vegans eat?? And which milk is best between soy, almond or rice? Im hoping to put a shopping list together before then.
Tomorrow is family dinner and most of them don't know that I have returned to vegan. Let's say they aren't supportive. Wonder what its going to be like tomorrow night at dinner!

Day 1
Day one of going back to being vegan went pretty smoothly. Today was my niece's birthday which included hamburgers, hotdogs and many dairy-filled delights. The meats weren't a problem to avoid. Dairy has been harder lately to avoid...but I am determined to get back to being vegan.
During the day I stuck mainly to my mom's pasta salad which is vegan sans the cheese that I took out. Between that and snacking on chips (vegan) I didn't have a problem. I continued to remember the videos I've seen and the facts I know about factory farming and it helped. I feel stronger about being vegan and wish I have never been anything but.
Thats all for Day 1. Let's see what happens.
